不吃早餐也會與癌症扯上關係?中國一項追蹤6年、涉及6萬人的研究發現,若習慣不吃早餐,罹患胃腸道癌症的風險會增加約2倍!研究亦發現,有1種飲食習慣令患癌風險更高。早餐吃甚麼好?有營養師推介5款健康早餐,有助提升認知能力、降血糖。

北京首都醫科大學附屬北京世紀壇醫院(Capital Medical University Affiliated Beijing Shijitan Hospital)研究進食早餐的次數與胃腸道癌症之間的關係。該研究涉及62,746 名參加者,追蹤長達6年,研究結果於2023年3月在《Journal of General Internal Medicine》[1]發表。

研究人員發現,與定期吃早餐的參與者相比,習慣不吃早餐的人士罹患食道癌、大腸癌、肝癌、膽囊癌和肝外膽管癌的風險增加2.06倍。至於每周吃1至2次早餐的人士,患胃腸道癌的風險則增加2.35倍。
不吃早餐恐患糖尿腦退化?5款健康早餐降血糖防失智
營養師顏瑜萱[2]在其facebook專頁指,早餐通常被視為一天中最重要的一餐,因為它提供整夜長時間禁食後所需的營養。近年來,多項研究已經證明不吃早餐,會增加肥胖、糖尿病、心血管疾病和認知功能受損風險。
吃甚麼早餐好?她引述另一項由利茲大學 (University of Leeds)學者探討有關成年人早餐和早餐成分與認知的文章,研究結果於國際學期刊《Science Direct》[3]發表。

健康早餐|1. 沒有血糖問題的人士
可以選擇等含有較高醣類且能迅速升血糖的食物 例子:香蕉、飯糰、饅頭夾蛋、三文治 好處:提高認知能力,進而提高工作效率。健康早餐|2. 有血糖問題/希望提高專注力的人士
應避免選擇單一的醣類食物,盡量選擇含有較少醣類且升血糖速度較慢的食物, 例子:麥片搭配無糖豆漿、番薯配茶葉蛋、菜肉包配無糖豆漿、蔬菜蛋餅、蔬菜芝士蛋全麥麵包等。 好處:升血糖速度較慢、提高專注力研究顯示,對於健康成年人而言,選擇含有較高醣類且能使血糖快速上升的早餐,可能有助提高認知能力,但對於有血糖調節問題(如糖尿病)的人而言則相反。
